I’ll admit it, beans are a bit of a new thing for me. I didn’t grow up eating them. My mum never made them and my partner can’t stand them, so they’ve just never found their way into my regular cooking. But oh my goodness, have I been missing out. I’ve completely fallen in love with them. A big pot of brothy beans is my idea of comfort these days, and I have Justine Cooks to thank for introducing them to me.
Even though I’m the only one in the house who eats them, I don’t mind one bit. I’ll happily cook two meals in a day (beans for me and something else for the family) if it means I get my bowl of beans. But don’t feel bad for me! My partner does the dishes after, so it all works out.
These lemony brothy beans are one of my favourite ways to make them. They’re fresh, light, full of greens, bright with lemon, and still hearty enough to fill you up. They are then finished off with slithers of parmesan for a sharp flavour. It’s the kind of meal that feels nourishing, simple, and just good for the soul. And it’s kind to your wallet too, which never hurts. They also come together in under 15 minutes!
