I had grand plans for my one pan meal episode this week but I have fallen ill to the flu and my goodness, I have never been so sick! So the lamb shanks that I made a special trip to my butcher for (as I was planning a lamb shank stew for this week’s recipe) have been thrown into a ziplock bag and shoved into the back of my freezer. There is just no way I will be cooking them this week. I am even struggling to get through writing this newsletter, so I will keep it short and sweet
Since lamb shank stew is officially off the menu, I’ve gone deep into my archives and found an old but absolutely delicious recipe to share. It’s my rich and creamy caramelised onion and sausage pasta. I actually forgot how good this one is. I was making it on repeat last year, and somehow it slipped out of my weekly rotation. But once I’m feeling better, I’ll be making it again in no time.
The onions are slowly caramelised until golden and sweet—it takes a little time, but it’s so worth it. Then the sausage meat is fried until crisp and golden. We deglaze the pan with white wine, stir in a splash of cream, some garlic, baby spinach, parmesan and pasta, and just like that we’ve got a beautiful, cosy little meal. I always make a special trip to the butcher for good quality Italian sausages because they really do make a big difference. Now don’t get me wrong, I’m no sausage snob. A cheap BBQ sausage in white bread is absolutely my thing (I am Australian after all, and it’s practically a national dish). But for this pasta, treat yourself to the good stuff.
