Good morning from Australia! I must admit, I have been a tad nervous to write this newsletter as I have been so absent with my dear but not forgotten Substack readers. I also feel like this might be the second time I am starting a newsletter this way and for that I am sorry!
If I am being honest, I have been feeling a little overwhelmed with everything I have on my plate. We introduced our second daughter to the world a little under 5 months ago and I am still navigating the ups and downs of life with a newborn and toddler, all while still trying to work!
But enough with the excuses!! I am back and here to stay. With that being said, I have made the decision to use this platform to share recipes that I post on my Youtube and website. There will be no paywalled recipes for the time being. I appreciate all of your support and if you do choose to continue to support me through here, it allows me to continue my work of recipe developing and writing. Again, thank you!
So where in the world has Daen’s Kitchen been and what have I been up to? I have put a lot of focus into creating long form YouTube content. I am testing and trialling lots of different style so if you do take the time to check it my latest videos, please leave a comment and let me know what you think.
I have also been sharing lots of recipes to my website including a chicken noodle soup with a homemade chicken stock that has quite the funny little story behind it. The day that I decided to film and photograph this exact chicken soup recipe, I was 37 weeks pregnant and in labour… I just hadn’t realised I was in labour yet. You can listen to the full story here.
And while my Australian friends are probably looking for nothing more that a comforting and cosy bowl of chicken noodle soup to keep us warm this winter, I am also creating some delicious tomatoes recipes for my American friends who have officially entered the best season of them all, tomato season. My one pot tomato pasta is perfect to make with some ripe and juicy cherry tomatoes.
I am also working on my American cookbook and while I feel like I have been saying this forever, I will have a launch date for you all VERY SOON!! Stay tuned…
What’s cooking this week
We have gotten a little fancy over on my YouTube channel with this delicious buttered lobster pasta. This creamy and rich pasta is made with luxurious pieces of lobster tail that have been poached in lots of butter and tossed through jammy cherry tomatoes. Any home cook can master this lobster pasta!
Oh chicken noodle soup. Is there anything more comforting? It’s literally the title of a book Chicken Soup for the Soul – which is all about soothing and comfort. That’s because there is nothing like a hug in a mug – a big bowl of chicken noodle soup. Just don’t make this one while in labour!
I am so excited about this one. This is my staple of winter recipes: my homemade chicken stock. And it’s something worth mastering. I use this stock in SO many of my recipes including Pastina, Chicken noodle soup, Leek risotto and Potato and leek soup.
It’s the latest instalment of my one pot pasta series! For busy working mums and dads, for uni students with stacks of assignments or if you just want some mid-week meal options – this one’s for you. I try to work through different vegetables, flavours and choices for all the palates. Well, this one is for all the tomato lovers! It’s my one pot tomato pasta.
