Today we are talking all things steak! I absolutely love a steak dinner. Recently, I have been making large batches of compound butters, rolling them into logs in butchers paper and storing them in my fridge to melt over a freshly cooked steak. Fry me up some eggs, drizzle over some hot honey, serve with some greens and I have the perfect dinner right there!
With a steak dinner, there’s just something so satisfying about that golden crust, the juicy middle, and all the flavour it brings to the table. But if you know me, you know I also love to mix things up a little. While a perfectly cooked steak is a thing of beauty, what really gets me excited is what I put on top.
I’ve tried so many sauces and compound butters over the years—bearnaise, herb butter, you name it. But lately, there’s one butter I just can’t stop making. Say hello to Cowboy Butter. It’s buttery, garlicky, herby goodness with a little lemon, a touch of Dijon, and a tiny kick of chilli. You spoon it all over your steak, let it melt into every little crack and crevice, and it’s a total game-changer.
The best part? This butter isn’t just for steak. It’s incredible on roasted chicken, seafood, veggies—honestly, just about anything. I love spooning it over grilled prawns, roast veggies, or even stirring it through pasta for a quick sauce. I usually make extra to have in the fridge for the week because it goes with everything.
Of course, all the butter in the world won’t save you if your steak isn’t cooked right. That’s why I’ve also put together a simple Pan-Seared Steak Guide. It’s packed with everything you need to know about picking the right cut, getting that perfect sear, and cooking it to your liking. Once you get the hang of it, you’ll feel like a pro every time steak night rolls around.
So let’s jump into these two recipes, and a few old steak recipes you and I have both been loving over the years.
