This happens to be one of my absolute favourite one pan meals! It’s one that I have been making for almost 5 years, standing the test of time by keeping itself in my weekly dinner rotation. The chicken is crispy and golden, the lemons are jammy and the onions are soft, sweet and caramelised. It’s also a recipe from my new cookbook, Garlic, Olive Oil & Everything Mediterranean.

As I have written in my cookbook, there’s really not much to say about this recipe other than it’s incredibly easy to make and creates a sauce that is so good you might want to drink it. But I mop it up with slices of my fresh focaccia or some olive oil mashed potatoes instead (when I am trying to be civilised.) If no one is looking, I am scooping up every last drop with my fingers.

This is such a great midweek meal for those nights that you don’t feel like cooking. Just make sure you buy chicken thighs with the bone in and skin on (which I know can be a bit of a pain but it’s just soooooo much better this way). Honestly, crispy chicken skin is so good I don’t understand why butchers cut it off. I even ordered a whole bowl of crispy chicken skin at my local pub last night and loved every bite.
