Midweek Munchies is back and I couldn’t be more excited! This is a series I started a few months ago where I share quick and easy dinner ideas that I have been making for my family. It’s recipes that I make “in between the gram.” Meaning, the content is a little more rough around the edges so doesn’t always end up on my social channels and website. Think more quick iPhone shots as opposed to professional taken food images and recipe videos.
While I love to make very indulgent, comforting and slow paced meals such as focaccia from scratch, slow cooked ragus and elaborate sandwiches, I also love to turn to quick and easy dinner recipes. Especially when time is of the essence with a new born, 3 year old and business to run!
Every week, I want to share a recipe that has been on high rotation in our house that happily feeds my family of four. They are meals that require minimal ingredients and most importantly, minimal effort.
First up is a recipe I have made at least 4 times this week already, it’s my maple butter roast chicken. The chicken is lathered in a rich butter sauce made with fresh rosemary, lots of garlic and maple syrup. That’s it! It’s absolutely delicious that I find myself licking up all the juices from the bottom of my plate. I serve this with a simple green salad and some fresh bread on the side. It couldn’t be easier and is so loved by my family.
