Well it has been quite a strange week for a food content creator! With the impending doom of the Tik Tok ban, I have been feeling rather nostalgic for everything that little platform has offered me over the past few years. It was from Tik Tok that I was able to turn Daen’s Kitchen into a full time career, be coined the internet’s garlic queen and be thrown into an ever lasting debate around my use of olive oil.
Even though I am Australian and Tik Tok is not going anywhere down this part of the world, it will never be the same without my US friends. While I am still remaining hopeful, I am feeling all the feels today!
So let’s jump into the first recipe of the week to cheer me up! A little while ago, I shared a recipe for my paid subscribers that you all seemed to love. And since I have decided to not pay wall any recipes this year, I wanted to share it over on my website so everyone can have access to it!
My maple butter chicken is lathered in a rich butter sauce made with fresh rosemary, lots of garlic and maple syrup. That’s it! It’s absolutely delicious that I find myself licking up all the juices from the bottom of my plate. I serve this with a simple green salad and some fresh bread on the side. It couldn’t be easier and is so loved by my family.
The second recipe is some grilled garlic butter scallops. I wanted to share this recipe in time for the holidays but life got the better of me and I simply ran out of time! While they are more of a festive or celebratory dish, I am here to tell you that scallops can be served any time of the year! I am not one to reserve dishes for specials occasions. The scallops are cooked in their shell which creates the perfect little plate for all that delicious garlic butter sauce to pool into. I am not embarrassed to say that i was licking the shell clean!
While I am no longer keeping any recipes behind a pay wall, your support still means the world to me! Any contribution allows me to continue to create and shares recipes for you all. Have a lovely week x
What’s cooking this week
This simple maple butter roasted chicken is bursting with sweet and savoury flavours from a delicious maple butter glaze and garlic butter sauce. The chicken is basted in the sauce making it incredibly juicy and tender. The sugars in the maple syrup caramelise as they cook, creating a rich and vibrant sauce. There is so much sauce left in the bottom of the pan that it’s perfect to scoop up with some fresh bread.
These grilled scallops do not disappoint on flavour, especially when using larger sea scallops! They are doused in a rich garlic butter sauce, grilled in their shell on the BBQ and finished off with some lemon juice and fresh parsley. While it may sound a little intimidating to grill scallops in their shell, they are surprisingly easy to make and will impress any guest!
You can’t go wrong with garlic butter or focaccia so why not combine the two to make the most irresistible garlic bread you have ever tried! Check out the full length video on my YouTube.
