I have been so excited to share these two new recipes with you! While I tend to share treasured family recipes that I have grown up eating my whole life, falafels and spanakopita were not common recipes that you would find on my Spanish and Italian mums dinner table. Nonetheless, I absolutely love eating them so I was determined to learn how to make them myself. Which I have done a pretty good job at… if I say so myself.
Growing up in Australia, we are so lucky to be surrounded by an array of different food cultures. Particularly in Melbourne, where I have lived for the past 10 years, which is considered to be the food capital of Australia. We have a falafel bar that will serve you THE BEST falafels you may have ever eaten outside of Egypt. I used to buy a 12 pack of their falafels that were warm out of the deep fryer and then eat them in the park with a group of my friends. They also make the most delicious falafel wrap that I have tried to replicate at home.
I am also SO EXCITED to say that my partner is officially on paternity leave which allows me to focus on work a few days a week for the next 6 months. I am not going to know myself! He has 24 weeks of paternity leave (2 months taken part time) and has made a list of all the activities he wants to do with the girls from museum visits to dinosaur parks. The whole family is excited!
Meanwhile, I am making a list of all the content I want to film, with a strong focus on my Youtube long form videos. I love making them so much and I want to give them the love they deserve. I have just hired a video editor so I am confident we are going to be getting some long awaited consistency happening with them. First up off the rank is my creamy mushroom pasta and one pot tomato orzo.

What’s been cooking
Here are my more than perfect falafels that are surprisingly easier to make than you may be thinking. I tested this recipe dozens of time to get it to the level of perfection that it is. They are crispy on the outside and fluffy on the inside!
I had big plans to give most of this spanakopita away to friends or neighbours but I simply could not stop eating it! I literally ate THE WHOLE THING! It was just so dam delicious that I couldn’t bear to give any away. This traditional Greek pie is filled with spinach, cheese, herbs and garlic… or garlic confit if you’re anything like me.
This is the ultimate falafel wrap! It’s filled with my delicious falafels, tabouli salad, tahini sauce and red pickled cabbage. I would have loved to have served it with traditional pickles but they are so hard to get your hands on and this was a great excuse to show off my quick pickled cabbage (that’s ready in under 15 minutes).
