Two Mac & Cheese Recipes
And some of my favourite sides!
So I know what you are thinking… why are we going to trust an Australian girl with our Thanksgiving Mac & Cheese when this isn’t even something she celebrates down under. But let me tell you this, I take my Mac & Cheese very seriously! It’s something my family and I love eating as a side dish to ribs, Saturday afternoon BBQ or even just as the main event. Especially when it’s my lobster mac & cheese.
I love Mac & Cheese so much that I have two different versions of it over on my website. I even have a third mac & cheese recipe but this one has been saved for my cookbook so if you have a copy of that turn to the “breadcrumb” chapter.
I also wanted to share some of favourite side dishes that will serve you well on the big day!
I wish all my American friends a Happy Thanksgiving! And while you are all enjoying a juicy turkey and hopefully one of my recipes, I will be on a plane jetsetting to Fiji for my partner’s 40th!
What’s Cooking This Week
This is not your regular mac and cheese. It’s mac and cheese for the garlic lover. My famous garlic confit is melted into the roux creating a rich and garlicky base. I have used a trio of cheeses, gruyere, cheddar and jarlsberg, that results in the creamiest, silkiest, most irresistible mac and cheese that will steal the show at your Thanksgiving dinner table!
If you thought mac and cheese couldn’t get any more luxurious, wait until you try it with sweet, buttery lobster. This lobster mac & cheese is my elevated take on the comfort classic, made extra silky with a garlic-infused roux and finished with tender lobster meat folded through a three-cheese sauce. It’s rich, creamy, cheesy and feels like the kind of dish you want to be serving this Thanksgiving!
These Crispy Garlic Butter Smashed Potatoes are one of my most viral recipes ever, with over 100 million views across my platforms… and for good reason. They taste exactly like garlic bread but in potato form! They’re golden, crunchy and crispy on the outside while staying soft and fluffy inside.
Everyone has their own method for the perfect roast potato, but trust me when I say nothing compares to my crispy duck fat roasted potatoes. If you want golden, crunchy-on-the-outside and fluffy-on-the-inside potatoes that truly melt in your mouth, then this recipe is for you! These roasted potatoes are going to steal the show at your Thanksgiving dinner table.
When it comes to holiday feasts, there’s always that one side dish that surprises everyone at the table. These Hot Honey Roasted Carrots are sweet, spicy, buttery, and caramelised to perfection. They’re simple enough to whip up on a weeknight, but so special that they may just outshine the turkey on your Thanksgiving dinner table.
If you think you don’t like Brussels sprouts, it’s probably because you haven’t tried them roasted in lots of olive oil until crispy and caramelised. These Crispy brussels sprouts with bacon are anything but bland. They’re golden, crunchy, and packed with flavour thanks to salty bacon and a drizzle of olive oil and sweet balsamic vinegar.
These tender yet crisp garlicky green beans with their amazing garlic flavour can knock any plain roast dinner off its perch. Plus, they’re ready to eat in just 15 minutes!
